INGREDIENTS

12 c Bread cubes
8 oz Cream cheese cubed
8 Egg
2 1/2 c Milk
6 tb Margarine
1/4 c Maple syrup

METHOD

Grease a 3 quart rectangular baking dish. Place half of the bread cubes in the dish. Top with cream cheese cubes and remaining bread cubes.
Combine eggs, milk, melted margarine or butter, and maple syrup in a blender container or mixing bowl. Process or beat with a rotary beater until well combined. Pour egg mixture evenly over the bread and cheese cubes. Using a spatula, lightly press layers down to moisten. Cover with plastic wrap and refrigerate for 2 to 24 hours.
Remove plastic wrap from baking dish. Bake, uncovered, in a 325 oven for 35 to 40 minutes or until center appears set and the edges are lightly golden. Let stand about 10 minutes before serving. Serve with syrup.

1/3 part self rising flour
1 egg
salt
sugar
buttermilk

METHOD

Just mix and spoon into hot grease-keep turning-place on paper towels to absorb excess grease.

French Chicken

INGREDIENTS

3 pound chicken, cut up
1 tablespoon cooking oil
1 cup sauterne
8 ounce can (1 cup) stewed onions, drained
1 cup sliced fresh mushrooms
1/2 cup coarsely chopped carrot
2 to 3 stalks celery, cut up
2 tablespoons snipped parsley
1/4 teaspoon dried thyme, crushed
1 clove garlic, minced
1 bay leaf

METHOD

brown chicken in hot oil. Drain. Season chicken to taste. Add remaining ingredients. Bring to boil; simmer, covered, 45 minutes. Remove celery and bay leaf; discard. Remove chicken and vegetables; keep warm. Boil sauce 5 minutes or till reduced to 1/2 cup.

Eggplant with Shrimp


INGREDIENTS

2 medium eggplant
1 lbs Shrimps, fresh, naked, chopped
1 cup onion, preferably white, naked, chopped
1 cup bell pepper, cleaned, chopped
1 cup celery, cleaned, chopped
2 Tbls. Butter
1/2 cup Shallots(green onions) chopped
Cavenders' Greek Seasonings or
Salt n' pepper. (Yuk!) to taste
2 cup Italian Bread Crumbs, (Seasoned)
2 eggs, opened, beaten

METHOD

Wash them eggplant real good, slice them lengthwise. Find you a pot, large, fill with slightly salted water, enough to cover them eggplant well, put over them fire, boil until tender, drain and let them cool. Scoop them meat from them eggplant, put into a metal bowl to help cool, drain well, and chop finely, put aside.
Get you them skillet, put them over them fire, medium, saute' them onion, green onion, bell peppers, celery, in them butter grease until softened, but still slightly firm.
Add them shrimps and cook

1/2 cup fresh espresso
2 1/2 cups lowfat milk
1/4 cup granulated sugar

METHOD

Combine all of the ingredients in a pitcher or covered container. Stir or shake until sugar is dissolved. Chill and serve cold.
