Breakfast Sausage Patties


INGREDIENTS

1 1/2 pounds chicken
1/3 cup green onion, finely chopped
2 teaspoons fennel seeds
1/2 teaspoon paprika
2 tablespoons fresh rosemary, finely chopped
1 tablespoon fresh oregano leaves, finely chopped
2 cloves garlic, minced
1 tablespoon minced parsley
1 to 1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon crushed red pepper
1 tablespoon oil

METHOD

1. Mix together chicken, green oniion, fennel seeds, paprika, rosemary, oregano, garlic parsley, salt, pepper, and curshed red pepper. Blend well.
2. Refrigerate overnight.
3. Remove mixture from refrigerator. Form into 3 inch patties.
4. Saute patties in hot oil until very brown and crisp on both sides, about 10 minutes.
5. Serve immediately with pancakes and maple syrup.
